Health{ier} Oatmeal cookies


While on my Noom journey, my friend posted about these cookies. They're like 70 calories (don't quote me on that as it depends on their size and what you add) and a good little guilt free snack. The original recipe comes from Well Plated. I've adapted it a bit, but check out her recipe for all the fun things you can add into them or how to make them GF or vegan.




Healthier Oatmeal Cookies


Ingredients:

2 1/2 cups of oats

2 cups of whole wheat flour

1 TBSP baking powder

1 TBSP cinnamon

1 TSP kosher salt

1/2 unsweetened applesauce

4 TBSP unsalted butter (melted & cooled)

4 TBSP coconut oil (melted)

2 eggs

1 cup maple syrup

1 TBSP vanilla

1/2 cup dark chocolate chips



Directions:

Mix together the oats, flour, baking powder, cinnamon and salt. Set aside.

In a medium bowl, combine applesauce, butter, coconut oil, eggs, maple syrup and vanilla. Stir until combined.

Mix dry and wet ingredients. Add in the chocolate chips (or any other additives: nuts, raisins, dried fruit, etc).

The dough will be wet and sticky: allow it to chill in the fridge for at least 30 minutes.


Preheat oven to 350.

Line a baking try with a silicone mat or parchment paper. Using a spoon or cookie scoop (I use a


small ice cream scoop), drop dough onto the pan. Cookies wont really spread, so you can put them about 1 inch apart from each other.


Bake for 10 minutes. Either leave them to cool, or smoosh down while still warm.


Store in an airtight container or ziplock in the fridge or freezer (I like to eat them straight from the freezer!)
