Overnight Oats

Even if you don't have kids--stick with me! This recipe is easy and yummy for all ages!

Awhile back I started to follow My Little Food Critic on Instagram. It was right about the time the twins started eating "real" food and I needed some ideas. I strive for their breakfasts to include a protein, dairy, grain and fruit. These overnight oats have it all and are the easiest thing to make. It's also easy to mix things up with this so they aren't the same each time. The twins love it and I've had it for breakfast many times too. Here's the recipe from the My Little Food Critic Toddler Friendly Healthy Family Meals cookbook. (If you like Indian inspired dishes or have littles of your own, you should check her out--she's got lots of amazing recipes and ideas for kids!)

Ingredients:

  • 1 cup rolled oats

  • 1 cup milk of choice

  • 5 tbsps full fat Greek yoghurt

  • 1 tsp vanilla extract

  • 1 tbsp chia seeds

  • 1 cup fruit (berries are our favorites!)

  • 1 tbsp maple syrup or sweetener of choice.

1. In a jar, combine all the ingredients and mix well.

2. Cover the jar and leave in the fridge for a minimum of 5 hours, ideally overnight.

3. The next morning, serve straight from the fridge.

The first time I made this I was amazed at the delicious smell. I also spoiled myself a little and added in chocolate chips--the topping ideas are endless!
